Good Eats

What seems like a lifetime ago, we built and ran a highly regarded restaurant here on the island.  And for the last 8 years we’ve been serving up some pretty tasty fare to our guests at Cayo France Farm & Fly.  Both of these experiences bode pretty well for our opening menu at RPPC  

Camp fare will feature fresh local ingredients prepared in Belizean and Yucatec styles. Ever wonder if grinding fresh coconut to make coconut milk is worth the trouble?  Yup.  Does a bit of fresh culantro (yes, “u”, not cilantro) make ALL the difference in rice & beans? 

Heck yeah.

Meal times are around fishing times.  And since in general flats fishing is not done in the dark, breakfast is at sunrise and dinner’s at dusk.

Coffee and breakfast are laid out around 5:45 each morning, buffet style.  Grab something quick to go and hit the flats or linger with a 2nd cup of coffee, the choice is yours.

Lunches are packed, ready to throw in a cooler or sling pack.

Dinners are served at sunset, family style. 

After dinner pour yourself a drink at the bar, regale in the day’s successes, lick your wounds from the day’s challenges and make a plan for the morning.  We’ll happily beat you at darts.  If you’re not an experienced player, we’ll happily play for $.  The game of the house is Cricket.  Practice your triples.
